BASMATI RICE
Basmati is a variety of long grain rice, famous for its fragrance and delicate flavour. Its name means “Queen of Fragrance” in Hindi.“Basmati” is long grain aromatic rice grown for many centuries in the specific geographical area, at the Himalayan foot hills of Indian sub-continent, blessed with characteristics extra- long slender grains that elongate at least twice of their original size with a characteristics soft and fluffy texture upon cooking, delicious taste, superior aroma and distinct flavor, Basmati rice is unique among other aromatic long grain rice varieties.The rice elongates almost twice upon cooking but does not fatten much. When cooked the grains elongate (70-120 % over the pre-cooked grain) more than other varieties.

1121 Basmati Rice is identified across the world for its appetizing flavour, enticing aroma, long grain, and non-sticky after cooking. Its known as most demand-able product in Basmati Variety. This variety of rice is known for its extraordinary kernel (grain) length, which can be as much as 8.4 millimeters (0.33 in) for a single grain, the longest-ever known released cultivar in the world. It has very high kernel elongation ratio ranging from 2 to 2.5, i.e. length of cooked rice kernel/length of uncooked kernel. When cooked, the rice does not turn sticky, possesses minimum breadth-wise expansion, and is aromatic with intermediate alkali-spreading value and amylose content.
It was developed by the Indian Agricultural Research Institute (IARI) and released for commercial cultivation in kharif season of 2003. By 2007, the variety has become widely popular with farmers, as Pusa-1121 is photo-insensitive, requires less water, matures early and yields 19–20 quintals of paddy per acre as compared to 9–10 quintals for traditional tall basmati.

This Pusa Basmati 1509 Rice is the first early maturing Basmati rice variety with seed to seed maturity of only 120 days and average yield of 4.25 ton/ha. It recorded an average yield advantage of 50.46 % over Taraori Basmati and 5.6 % over Pusa Basmati 1121 rice variety.

Sugandha Basmati Rice is Hybrid of traditional Basamti Rice and has no aroma. Cooking of Sugandha Basmati Rice is identical to Basmati Rice with elongation upto 14-15 mm. Non-BASMATI RICE
Non- basmati rice comes in all kinds of different shapes and sizes. Some are long and slender, some are short and thick, some are like beads, and some may be round. None have the same characteristics as basmati rice. Some names of non-basmati rice are shaped like basmati rice and PR, 104 IR8, IR 64, Masuri.

Long Grain Rice is very famous for its long texture and non sticky quality. These are non aromatic type. These cooks hard and longer time due to more amylose content. Its tastes sweet and can be stored for a longer time after cooking. This rice elongates from 6.3 mm to 7.4 mm after cooking as per variety.

Fragments of rice grains are commonly called Broken rice. The rice grains become fragmented/broken in the field or during drying process or during transport or in milling. Broken grains from the whole grains are separated using mechanical separators and are sorted by size
Broken rice is fragmented and it cannot be considered as defective. It has equal nutrition as unbroken rice contains. Also, if the broken rice contains all germ and bran, then it has nutrition as brown rice and if nothing remains, then it has nutrition as white rice.
Because of the dissimilarity of grains size and shape, broken rice has a diverse & softer texture as compared to unbroken rice, and it easily absorbs flavours. It takes less cooking time, also consumes less fuel, and used for making rice porridges and congees, which takes longer cooking time.
